Puff Pastry Feta & Ham Wraps with Tenderstem® broccoli

Method

  1. Turn on the oven to 210 degrees fan and place baking paper on two baking sheets.

  2. Wrap 2-3 Tenderstem® broccoli in a piece of serrano and repeat so you end up with 16 servings.

  3. Blend the feta with 1 clove of garlic, 1 bunch of parsley, 1 bunch of chives, salt and pepper.

    Put the feta cream in a piping bag.

  4. Cut each sheet of puff pastry into 8 pieces and spread a generous strip of feta cream from one corner down to the opposite corner, then place a portion of Bimi® broccoli with serrano on top. Fold the two opposite corners of the puff pastry over the filling and pinch slightly to have a nice half-open wrap.

  5. Repeat and distribute the 16 bites onto the two baking sheets

  6. Brush them all with egg and sprinkle with sesame.

  7. A tip is to brush the top of the Tenderstem® broccoli with a little water so it doesn't turn brown as quickly.

  8. Bake the wraps for about 15 minutes.

  9. While they're baking, chop parsley and red onion for the dip and stir in the crème fraîche, salt and pepper.

  10. When the wraps are golden brown, everything is ready to serve.
