Tenderstem® Roast Hacks – Chicken but Better!
Method

In a large pot, mix water, salt, and sugar. Stir until dissolved, add lemon, garlic, and herbs. Cool completely.

Submerge chicken in the brine for at least 6 hours (12 for max flavour).

Pat dry, drizzle with olive oil, season, and roast at 200°C for about 1 hour 15 minutes.

Add Tenderstem® for the final 10 minutes to roast in the juices.

Rest, carve, and serve with glossy green stems.
