Ghanaian-Spiced Tenderstem® broccoli

Warm up seasonal veg all year around with Zoe Adjonyoh's traditional Ghanaian spice blend known as suya, used in this recipe.

Zoe said: “This is such an easy way to introduce West African spices to your cooking. Suya is a spice blend that originates from Nigeria and is widely popular in Ghana; it is commonly used as a marinade for grilled meats. Traditionally it includes ground peanuts in the spice mix, but this recipe excludes them. However, roasted peanuts can be used to garnish as an option. I love adding a little taste of West Africa to everyday dishes.

“Roasting is actually a really quick way of cooking – I recommend you leave the marinade to soak for at least 2 hours if you can, but you still get loads of flavour from the vibrant marinade when applied just before roasting, too.

“This dish is so simple and packed with flavour. Serve as a side to your Sunday roast – you can even add extra veg such as carrots and parsnips to make a medley of seasonal veg if you double the marinade quantities.”

Method

  1. Make the suya mix: simply combine all the ingredients together.

  2. In a food processor, blend all the marinade ingredients together until smooth.

  3. Coat the Tenderstem® broccoli with the marinade making sure to get into as many crevices as you can. Place the Tenderstem® broccoli into a casserole dish or lined baking tray. Cover and refrigerate, ideally for 2 hours, or at least while waiting for the oven to reach the right temperature.

  4. Preheat the oven to 180°C/160°C/gas mark 4. Remove the marinated Tenderstem® broccoli from the fridge 10 minutes before you want to cook it.

  5. Roast in the oven for 20 minutes, then serve.

    Tips

    Save any excess spice mix in an airtight container for another day – perhaps to marinate some steak!

    Make a quick tempura batter with 100g plain or gluten-free flour and about 100ml water, seasoned with nutmeg, sea salt and black pepper. Dip the marinated Tenderstem® broccoli into the batter and deep fry for 3 minutes at 180° This makes a great party plate!
